We ended up choosing the Green Pea Fritters which yes, is linked to this blog title.
This recipe included all things I love:
- Quick and easy
- Making food with my hands
- Using fresh ingredients
- Lots of chilli
- Opportunity to change it to make it something different
- And peas. I love peas.
The recipe called a gluten-free flour (such as coconut, almond or brown rice) which was surprisingly challenging to find as most health shops battle to store the coconut and almond flours as they turn rancid rather easily because of their fat content.
We had cut the ricotta into very generously sized blocks and although this did result in the fritters not cooking perfectly on each side, the fritters were fun and easy to make! I had used the whole lemon and placed the zest into the fritter mixture and when served, the lemon juice was squeezed over the warm fritters.
I will definitely try make these again - maybe putting in some mint and more coriander into the fritter mixture. Although it would be lovely with loads of greens, I don't think they will work on top of a salad as the fritters do tend to break and crumble when you begin eating them - perhaps causing your salad ingredients to burst out of their constraints and out of the bowl.
